Lobster Rolls

Serving Size:   1 Roll


INGREDIENTS:

  • lobster meat from three 1½ lb lobsters

  • 4 potato rolls

  • 4 oz Hellman's mayonnaise

  • 1 tbsp celery leaves

  • 2 tsp yellow mustard

  • juice of 1 lemon

  • 1 tsp old bay seasoning

  • 2 tbsp butter, at room temperature

  • 2 tbsp finely chopped chives

  • salt and pepper to taste

  • 1 tbsp sriracha (optional)

 

DIRECTIONS:

  1. Cut the lobster meat into ½ inch pieces and set aside

  2. In a medium sized bowl, mix together the mayonnaise, mustard, celery leaves, old bay seasoning, lemon juice, salt and pepper (and sriracha - optional)

  3. Add the lobster meat and fold it into the mixture

  4. Spread butter on the potato rolls and grill until golden brown (if you don't have access to a grill, you can warm them face down in a pan on the stove over medium high heat)

  5. Evenly distribute the lobster meat mixture between the four potato rolls and top with chives

  6. Serve with potato chips and a lemon wedge
