Lobster Rolls

Serving Size: 1 Roll
INGREDIENTS:
lobster meat from three 1½ lb lobsters
4 potato rolls
4 oz Hellman's mayonnaise
1 tbsp celery leaves
2 tsp yellow mustard
juice of 1 lemon
1 tsp old bay seasoning
2 tbsp butter, at room temperature
2 tbsp finely chopped chives
salt and pepper to taste
1 tbsp sriracha (optional)
DIRECTIONS:
Cut the lobster meat into ½ inch pieces and set aside
In a medium sized bowl, mix together the mayonnaise, mustard, celery leaves, old bay seasoning, lemon juice, salt and pepper (and sriracha - optional)
Add the lobster meat and fold it into the mixture
Spread butter on the potato rolls and grill until golden brown (if you don't have access to a grill, you can warm them face down in a pan on the stove over medium high heat)
Evenly distribute the lobster meat mixture between the four potato rolls and top with chives
Serve with potato chips and a lemon wedge
